Fish Tacos

Chef Cynthia Williams shows us how to create fish tacos.


Zest and juice of 1 lemon
3 tbsp olive oil
1 tbsp fresh minced garlic
Salt and pepper to taste

Shred zucchini and squash, chop tomato and cucumber, and add remaining ingredients.  Mix well.

Assemble Tacos
Flour tortillas
Shredded cheddar cheese
Lettuce, optional
Chopped fresh cilantro for garnish, optional

In each tortilla layer cheese, shredded fish, slaw, and salsa.  For presentation place tacos on a bed of lettuce.  Top with additional cilantro if desired.
