Delicious Father’s Day Dip from John Oliver

Our old friend John Oliver has turned out to be quite the foodie and has a tasty dip that dad would love for Father’s Day.  Check it out to learn this simple, delicious recipe.

One 15.5 ounce can of black eyed peas, rinsed and drained One 14 ounce can of seasoned collards drained Juice of one lemon

1/3 cup roasted red pepper

2 cloves minced garlic

Heaping tablespoon of creamy peanut butter.

Two or three fresh basil leaves (optional) Combine all ingredients except collards in food processor and blend for one minute or until smooth and creamy. Fold in the collard greens.

Serve at room temp.
